A Little Artsy-Fartsy - PSE Photomerge

This is one of those pictures that one minute I think is amazingly beautiful and the next minute I think is childishly hideous photography. It's a toss up. Apparently, at this moment, I'm feeling pretty good about it. I used PSE's Photomerge. 

I took two different exposures of the same shot and did a quick File > New > Photomerge > and combined two different exposures of the almost the same shot.

Project Pinterest: Fajita Seasoning Mix

Hello! We had a lot of great projects shared here last week. It's hard to choose a favorite, but I will! This week my favorite link-up was Denise's from her blog Run DMT! Her humor about Martha Stewart cracked me up! Her Martha Stewart Shortbread Candy Bars looked devine. Denise, look for you "I've Been Featured" button in your inbox!

On to this week's project. We have a few favorite meals that rotate at our house. One is fajitas! Usually I bought prepackaged seasoning mixes (which of course have all the icky stuff like msg in them) and was ok with that because I tend to like what is convenient and easy. Until, I came upon the notion that you could easily make your own fajita seasoning with spices you most likely already have in your cupboard! I found the pin at forthemommas.com.


I quadrupled the recipe so I could have it to use whenever I needed it without having to drag all the spices out again. 
See, I'm all about quick and easy!



4 TBSP cornstarch
8 tsp chili powder
4 tsp sugar
2 tsp salt
4 tsp paprika
2 tsp onion powder
1 tsp crushed red pepper flakes
1 tsp garlic powder
2 tsp cayenne pepper
1 tsp cumin

Mix all thoroughly and put in an empty spice container for later use.

I don't have a picture, but I thought I'd share how I make fajitas too.

Cut up an onion in thick (1/2 inch) slices. Cut up a green pepper in thick slices. Cut up a red pepper in thick slices. Cut a protein (our favorite is thin, lean steak) in strips. Heat a large skillet on medium-high. Add a little EVOO or canola oil. Toss in meat and cook for a minute or so, or until it's no longer pink. Add in veggies and seasoning. Stir around and cook until preferred doneness. Serve in a tortilla shell with sour cream. Yum!

Project Pinterest: Taco Pizza Just Like Taco Bell's

Well hello! It's been so long since we've seen each other for Project Pinterest. Welcome back! We have a new co-host. Let me introduce you to Sandee from In the Hill of North Carolina! Between us, we've go the Carolinas covered!

OK, on to the project! Anyone else a huge Taco Bell fan? I'm not a fast-food junkie. I could care less about ever eating at a McD's, Sonic, KFC, etc., but I could not live without Taco Bell!



I found the post on The Country Cook's blog.


Here's what you need:
tortillas
ground beef (or turkey)
taco seasoning
refried beans
enchilada sauce (red or green)
shredded cheese (Mexican blend works well)
chopped roma tomatoes


Preheat the oven to 350. You can either fry your tortillas or brush a little EVOO on the front and back side of each and bake for about 4-5 minutes per side or until crispy and brown. 

Meanwhile, brown the ground beef, drain grease, and add seasoning. Open refried beans and warm them in the microwave or stove top. 

*The key to keeping the tortillas nice and crispy is to have a nice and hot baking stone to cook them on.*

Put a tortilla on the stone. Spread refried beans on and heap seasoned ground beef on top of the beans. Place another tortilla on top. Pour on the enchilada sauce to cover the tortilla. Top with cheese and tomatoes.

Bake until the cheese is melted and bubbly.

Eat and enjoy! I know you will!

Be Back Soon!

We're on spring break! The boys and Kurt are on a sailboat in the Gulf of Mexico with my uncle. I'm a ball of nerves and happy to have some "alone" time as well. The boys have never been on the boat (a 45-ft sailboat). Anytime there's something new, Charlie goes through several emotions and although he was excited, he was also quite stressed. I'm hoping and praying things are going well and am continaully praying and asking God to take special watch over them while they're gone.

I didn't even bring my computer so there will be no pictures yet or no Project Pinterest this week. Can't wait to share photos next week with you though!

Project Pinterest: Diet Mt. Dew

This week is a little different. OK, a lot different. I didn't do anything this week. I gave up Dt. Mt. Dew last week. For most, that might not be a big deal, but for me, it's huge. I've been drinking it every day for the past 20-some years. I wanted to take a small step toward less artificial food. This was my step. It's been HELL! I cannot get over this horrible headache. I'm very frustrated. It's been 11 days and I feel miserable. I'm drinking a ton of water and just wishing I would feel well.

Anyway, there is no Project Pinterest (or anything else) this week. Ugh!
